[ A Brief Note]鯛 Tai – sea bream. Considered the king of the ocean. Tai can be prepared in various dishes and is often served at celebrations as the name is felicitous, “omedetai”. The favored dish at any major Japanese celebration, the tai\'s popularity stems from a combination of the fabulous taste of its firm, white flesh and wordplay association:medetaiin Japanese means to \'celebrate\'.
Hagi ware is a pottery made in Hagi City, Yamaguchi Prefecture, Japan. The subtle form and natural, subdued colors of Hagi ware are highly regarded. In particular, the beautiful contrast between the bright green color of matcha [tea] and the warm neutral tones of Hagi ware is aesthetically notable. The beauty of Hagi ware is appreciated not only for its earthy colors but also for the glaze. The translucent beige glaze is to draw out the natural, deep colors of the clay. After being heated in the kiln, the glaze creates its signature fine web of cracks and fine pores -known as kan-nyuu (貫入) or crazing- while coolingTraditionally, in the world of tea ceremony, Hagiyaki is a highly regarded tea ceremony, as it has been praised as \"Ichiraku (yaki), Nihagi (yaki), Sankaratsu\" as the ranking and rating of matcha tea bowls.
