I have been looking for a larger, lighter Chinese cleaver since I lost my old one ten years ago. This is a weighty knife only because the blade is larger (8 5/8” X 4.25”) than the more common 8”X3” size blade, its thickness at the spine being only 2mm. One should stick to using this knife strictly with fruits, veggies, and boneless meat.
The knife came out of the box very, very sharp. After washing it, I sliced through pounds of flank steak and a mound of veggies for dinner. It was wonderful.
