Vintage French Copper Frying Pan #28 L. Lecellier Cuivralec France Iron HandleBeen using this beauty in my kitchen for a while now, but have a couple and one is all we need so it\'s time to clear up some clutter. It was cleaned and polished a couple of weeks ago and as you can see, we have continued to use it. They aren\'t meant to be shiny if you are using the pan. The patina you see is after 4 or 5 heat cycles and a couple of weeks of exposure to air(normal copper oxidation). The number code on French pans represents the size in centimeters - in this case 28, aka ~11\". The condition of this pan is very good, albeit with a few \"tool\" marks/scratches/dings. Fortunately, the Cuivralec line of pans which date to the late 1970\'s have a, relatively unique to the era, aluminum liner rather than tin. It is far more durable than the tin coating in traditional French copper pans and doesn\'t ever need to be relined. The Lecellier family has a long and reputable history in the handmade French copper pan industry. These are fantastic pans and you won\'t be disappointed in how it cooks. Solid copper pan cooking is not just hype!
The pan is 2\" high from base to rim and 20-1/2\" in total length. The handle is 10\" long. It weighs nearly 4 pounds. While the photos make the handle look crusty and rough, it\'s exactly the opposite - it is smooth and feels perfect in the hand. It seems the coating they used kind of mimics a cast bronze or copper look. The coating is worn on one spot on the bottom where it is most grabbed and along the edges a bit so you can see the shiny cast iron and there is zero scale(rust).
