Ok this is a rare bird . Its a 13 inch new old stock Sabatier Chefs Knife . Made in the fifties or early sixties when Sabatier made every knife from 4 in to 14 inch in approx inch increments . Never sold . The one in the photo is the last one of three , I kept one ( Yeah I am that Guy ,it fits in between my 12 and 14 inch ), the one you get will be covered with greasefrom the factory,to prevent it from rusting . Handle , Black Plastic , Blade Carbon Steel 52 to 54 HRC .
