Most cookware is not the sort you want to feature at a dinner party table. But there are exceptions. At first glance, Nambe serving bowls and platters look like massive contemporary handmade silver pieces. They have much of silver`s shiny, satiny elegance, but that`s where the resemblance ends. Despite their handsome serving dish appearance, Nambe pieces are almost as functional in an oven as they are on a beautiful holiday table. Unless you use your Nambe to heat, broil or bake in, you`re not using it to its fullest potential. Nambe cookware can withstand any temperature that stainless cookware can, according to a company spokesman. The cookware is named for a Native American pueblo in the heart of New Mexico`s Sangre de Cristo mountains. But the product is entirely a modern invention. It traces its history no further back than 1951, when a Los Alamos metallurgist discovered a durable new aluminum alloy, which he called Nambe. This alloy, it turned out, is incredibly nonporous, while relatively lightweight and superb at retaining both heat and cold for long periods. When baking, it is wise to lower the oven temperature and reduce cooking time because of Nambe`s tremendous conductivity. Food does not stop cooking in Nambe cookware when it is removed from the oven. Nambe is made by a small group of Santa Fe craftsmen using sand molds. A bowl or platter is broken away from its mold and shaped and polished to a silvery luster that, with age, acquires a patina all its own. Because each sand mold is used only once, no two pieces are exactly alike.
