About the YS-900 Series:Knives of the YS-900 Series have Hon-Warikomi clad-blades, which have an extremely sharp Swedish sandvik 19C27 stainless steel cutting core that contains a high percentage of carbon. After heat treatment the steel is possesses a very high hardness, HRS 60-61 level and good wear resistance. Sub-zero treatment further improves their wear resistance. These have excellent edge retention HRC 60-61. The handles are a beautiful ly-finished black wood with excellent grip and stand the test of constant use.
