PLEASE NOTE: We take our photos in natural light outdoors and as a result there are sometimes reflections or shadows or glare shown in the blades. In person none of these exist; we will say so in the description if it may be otherwise. If there is any question, please don't hesitate to email us and ask! Bearing the "NAPOLEON" imprimatur that was once used to export Sabatier knives to the English-speaking world, this knife was produced in the late 19th Century by one of the oldest Sabatier companies when they were still being made in Paris and prior to their industrial operations having been moved to Thiers. Made with a blade hand-forged from some of the finest carbon steel ever to come out of France, there are few words which adequately describe it more than just plain "Wow!" It was expertly hand-forged with what's known as a Nogent-style handle, a purely French design named for the legendary knifemaking city of the same name, near Thiers, that uses a rat-tail tang below the blade (tang, flared bolster and blade are one piece) to pierce the handle, with an iron ferrule at the bolster to provide added strength. The great deal of labor that goes into this design (my personal favorite for a vintage chef's knife of any configuation) favors a lighter-weight, higher degree of balance and, in my humble opinion, true craftsmanship and beauty in a chef's knife the likes of which are found no more in ANY modern knife.

The casual observer will say something like, "but it isn't all one piece like those fully-forged Henckels knives I see at Bloomingdales!" You poor, uninformed thing! THIS design was the pinnacle of craftsmanship in chef's cutlery and was all but completely abandoned after WWII in favor of today's designs, only because they were far easier to mass produce. These, however, required one guild to forge the blades, another to finish them, another to make the handles and the "hafter's guild" to fit them all together. If you're someone who knows the FEEL of fine knives, you won't have to use this knife twice to understand what it's capable of, and you will experience nothing short of a revelation of performance. It is a lightweight DYNAMO in the kitchen, and your hand will BLAZE through jobs in the kitchen (if you're like me, you'll start looking for things that need chopping).

Like all fine vintage carbon steel knives, it will rust if not carefully kept dry during use, but you'll be richly rewarded for your trouble with superior slicing in every way, shape and form. Carbon is also easier to rehone and does not require a blacksmith's skills to achieve the finest possible edge. Handle is a solid chunk of ebony, as warm to the touch as it is pleasing to the eye. Condition of the knife is excellent, as you can see in the photos, with a few signs of normal use but none of the hairlines that usually bedevil fine antique knives of this construction.

This is a VERY highly treasured knife in the serious chef's kitchen, and not just for chopping; it also will shave WAFER-thin slices of charcuterie, tomatoes, onions, or anything else.

RETURN POLICY:Your intention to return MUST be emailed to us within 72 hours of receipt of your item and item MUST be received within 14 days, as determined by Delivery Confirmation delivery time posted on the USPS website. All returned items must be in the same, saleable and unused condition as when shipped, with all original packaging and/or with all tags attached where applicable. There will be NO EXCEPTIONS to this policy. Buyer is responsible for shipping.

SHIPPING: NO ONE likes the cost of shipping. We do whatever we can to minimize your shipping costs on multiple purchases, and in most cases, combining multiple wins will save BIG, often shipping two or more items for the cost of one. In order to streamline the process, we will provide a flat, upfront shipping rate in our sales whenever possible for all U.S. buyers. IN MOST CASES ACTUAL SHIPPING WILL BE LOWER THAN WHAT WE CHARGE; this is the way we pay our teenage neighbor to pack and ship our items (he keeps the difference). If you dislike this or find this unfair, PLEASE shop elsewhere; we only want happy customers and it's our feeling that no one should be able to claim dissatisfaction with this policy, since we're stating it up front. It's not an attempt to profit, simply the only way my elderly bones can continue to offer so many items. Please keep in mind, too, that our prices for shipping in USA always INCLUDE insurance AND Delivery Confirmation unless otherwise stated (sorry, no exceptions to this.). WE SELF-INSURE using our business policy. Items lost or damaged in transit require buyer to file an affidavit for our insurance policy via a claim form similar to the U.S. Post Office or UPS insurance claim forms. I will gladly send you the forms necessary to file. We usually ship on Wednesdays and Saturdays, but sometimes our teenage packaging guy may have an exam, or he gets to the P.O. late, so again, we ask you in advance to please forgive our humanity. Usually, we sell knives, not human organs for transplantation, so time really shouldn't be too critical, but if you have special needs, please email us prior to offerding. We take customer service very seriously and want to do whatever it takes to meet your needs. If you're not in total agreement with us here or disagree for any reason, we can only urge that you PLEASE shop elsewhere.

INTERNATIONAL: The U.S. Post office has recently raised all international shipping rates, and so must we. NO ONE likes this but all terms of shipping are NON-NEGOTABLE. Int'l shipping rates posted in our ads include a minimum $5.00 handling (sorry, even Canada, due to tedious Customs forms and Post Office procedures) to cost of actual shipping, with acceptable payment on international transactions in the form of paypal only. If you can only pay via some other method, email us prior to offerding. International packages will be calculated on the basis of a MINIMUM ONE POUND weight. International packages cannot be insured and we cannot be held responsible for packages lost or damaged in transit (we pack very well, but shipping overseas is strictly at buyer's risk). Want tracking? You will have to pay an additional $13.65 for Registered Mail or you may upgrade to the option of Express Mail International. IMPORTANT: After TWELVE YEARS of doing everything we could to hold the line on int'l. shipping costs, we have taken our LAST loss, so we've been forced to implement a new policy in which Shipping costs on ANY international parcel sold for over $75 will now include a required $13.65 Registered Mail fee in order to make your purchase trackable. This is 100% non-negotiable. The cost will be factored into the posted shipping costs of any item that STARTS at $75 or more, but if you purchase several items, the charge will have to be added at the end. Again, this is NON-NEGOTIABLE.

We have NO control of your parcel once it has been shipped, and in our Post-9/11 world, your own nation's Customs may cause lengthy delays in delivery time.
